Indian Coconut Shrimp

Quick and EASY, this shrimp curry dish with coconut milk is perfect for a midweek lunch or dinner.

Main Dish Ingredients
  • 1 KGMedium to Large Shrimps,
  • 1 TBSPDry Coriander
  • 1 TSPMustard Seeds
  • 1 bunchCoriander Leaves (Approximately 1 1/2 cup)
  • 2 canscoconut cream
Paste Ingredients
  • 3 TSPVegetable Oil
  • 2 PiecesFresh Ginger (peeled)
  • 2Green Chilis (Deseeded)
  • 6Spring Onions
  • 4Garlic Cloves

الطريقة

  1. In a food processor pulse all paste ingredients until smooth and green. It will look like a soft paste. Set aside.
  2. In a pot, toast dry coriander and mustard seeds until fragrant, one or two minutes tops, then add paste.
  3. Cook paste for 5 to 7 minutes then add the two cans of coconut cream.
  4. Bring then to a soft boil.
  5. Add shrimp and let it boil with the sauce until it turns nice and pink.
  6. Add the coriander leaves and serve next to rice.
