Sini Manti

Manti is a traditional Armenian dish similar to Shishbarak served with two sauces. This is a step by step recipe for dough and assembly of the dish

Sini Manti

المقادير

For the Dough
  • 2 cupspasta flour – I used Pivetti by Juthour
  • 1 TSPSalt
  • 4 TBSPVegetable Oil
  • 1Egg
  • ½ CupWater
For the Meat
  • 250 gramsminced beef
  • 1small onion (finely diced)
  • ¼ cupparsley (finely diced)
  • ¼ TSPBlack Pepper
  • 2 TSPMixed Spices
  • ½ TSPSalt
For the Yogurt
  • 1 cupyogurt
  • 1garlic clove
  • Salt to taste
  • For the Tomato Sauce
  • 2 TBSPOlive Oil
  • 1garlic clove
  • 500 MLChicken or Beef Stock – I used Chicken
  • 2 TBSPTomato Paste
  • 1 TBSPLemon Juice
  • ½ TSPPaprika
  • Salt to Taste
For Garish
  • Sumac
  • Dried Mint

For the Yogurt

  1. Mix the yogurt, garlic, and salt. Set aside so the flavours an infuse.

For the Dough

  1. In a bowl of your stand mixer mix flour and salt.
  2. Add vegetable oil and one egg and mix in.
  3. Gradually add the water.
  4. Allow to mix until the dough sticks to the dough hook.
  5. Remove, divide into two balls.
  6. Flatten into disc and cover with cling film.
  7. Place it in your fridge for 45 minutes.
  8. When you take the dough out of the fridge flour your work surface and roll out the discs.
  9. Cut in half and roll using your pasta cutter.
  10. I roll two times per number until I reach # 4.
  11. So that's 8 times rolling the dough.

For the Beef

  1. Mix 250grams of ground beef, 1 small diced onion, and one quart of a cup of chopped parsley.
  2. To season your beef, add 1 TSP Black Pepper, 2 TSP Mixed Spices and 1/2 TSP of Salt.
  3. Mix the beef mixture very well by hand, and shape into balls, approximately 1 TSP in size.

For Tomato Sauce

  1. Cook one garlic clove in some olive oil until fragrant.
  2. Add 500 ML of your stock of choice (beef or chicken) i used chicken.
  3. Add 2 TBSP of tomato paste and mix well.
  4. Add in 1 TBSP of lemon juice.
  5. Season with salt to taste and half a TSP of paprika.

To Assemble

  1. Bake manti in a preheated oven for 20 minutes at 220.
  2. When you take it out of the oven, top with tomato sauce. You will hear a drizzle that will make you smile.
  3. Top with yoghurt mix.
  4. Garnish with dried mint and sumac.
